About this recipe:I always enjoy this fattoush salad and never get tired of it. It has a lot of flavour. Sumac is a ground spice made from dried berries - you should be able to find it in Middle Eastern stores. If you can't, you can add 1 tablespoon grated lemon zest instead.
10 large romaine lettuce leaves, cut into strips
2 tomatoes, diced
1/2 cucumber, diced
30g radishes, diced
1/2 red pepper, diced
1/2 red onion, diced
25g fresh parsley, finely chopped
25g fresh mint, finely chopped
1 tablespoon sumac spice or grated lemon zest
salt to taste
2 cloves garlic, crushed
2 tablespoons olive oil
2 lemons, juiced
Lebanese bread or pitta bread, for serving

Place lettuce and all the diced vegetables in a bowl. Add the herbs and sumac, and season with salt.
Make a paste with the crushed garlic, olive oil and lemon juice. Pour over the salad.
At the last minute, grill the pitta bread and crumble it over the salad.
