Lebanese salad

    I always enjoy this fattoush salad and never get tired of it. It has a lot of flavour. Sumac is a ground spice made from dried berries - you should be able to find it in Middle Eastern stores. If you can't, you can add 1 tablespoon grated lemon zest instead.

    Serves: 8 

    • 10 large romaine lettuce leaves, cut into strips
    • 2 tomatoes, diced
    • 1/2 cucumber, diced
    • 30g radishes, diced
    • 1/2 red pepper, diced
    • 1/2 red onion, diced
    • 25g fresh parsley, finely chopped
    • 25g fresh mint, finely chopped
    • 1 tablespoon sumac spice or grated lemon zest
    • salt to taste
    • 2 cloves garlic, crushed
    • 2 tablespoons olive oil
    • 2 lemons, juiced
    • Lebanese bread or pitta bread, for serving

    1. Place lettuce and all the diced vegetables in a bowl. Add the herbs and sumac, and season with salt.
    2. Make a paste with the crushed garlic, olive oil and lemon juice. Pour over the salad.
    3. At the last minute, grill the pitta bread and crumble it over the salad.

    I really enjoyed this as an addition to a few other Middle Eastern dishes I was making for dinner. I only used half of the lemon juice suggested and felt like that was enough.  -  16 Jan 2016
