A tasty sardine dip or spread with fresh herbs and goat cheese. For an original presentation, rinse the sardine tins and serve the dip in them.

2 (120g) tins sardines in oil
3 tablespoons minced chives
40g minced fennel greens
1 small shallot, minced
salt and pepper
1 pinch piment d'Espelette or cayenne pepper
70g fresh goat cheese

Drain sardines, remove the centre bone and place sardine fillets in a bowl. Crush with a fork. Stir in chives, fennel greens and shallot, and season with lemon juice, salt and pepper, and pigment d'Espelette.
Add the goat cheese and stir well to combine. Adults seasoning and serve, or refrigerate till serving.
