2 small leeks, washed and thinly sliced
250ml single cream
50g grated Cheddar cheese
freshly ground black pepper
100g ham, diced
1 (375g) shortcrust pastry sheet

Preheat the oven to 180 C / Gas mark 4.
Melt the butter over medium heat, then add the sliced leeks and cook for 5 minutes, or until softened.
In a bowl, beat the two eggs, cream and milk together. Add the grated cheese and season with pepper.
Line a pie dish with shortcrust pastry. Spread the cooked leeks and ham over the pastry and pour in the cream mixture. If the dish is filled to the brim, place on a baking tray and cook for 30 minutes.
Gorgeous! It tasted great!
My only criticism is that it probably should have gone on 200 C instead of 180 C but that may have been because i had quite a deep cake tin. Also it took a bit longer than 30 minutes to cook but besides from that it was very nice and the family all liked it - 26 Jun 2015
