Leek and ham gratin

    The white part of leeks are wrapped with cooked ham and covered in a creamy white cheese sauce. A lovely side dish!

    Serves: 6 

    • 6 leeks (white part only), washed
    • 40g butter
    • 40g plain flour
    • 500ml milk
    • 50g grated cheese
    • Salt and pepper
    • 3 large slices of cooked ham, halved

    1. Steam the leeks in a steel colander over a pot of boiling water, for 10 minutes. Drain and set aside for a few minutes to cool while you make the sauce.
    2. To prepare the bechamel sauce: Melt the butter in a saucepan. Add the flour and mix well. When the mixture starts to bubble, pour the milk in one go into the saucepan and whisk. Simmer for 5 minutes, stirring constantly. Season with salt and pepper; remove from heat and add grated cheese.
    3. Cool the leeks for 5 minutes then wrap a slice of ham around each one. Transfer the wrapped leeks to a buttered casserole dish. Pour over the sauce.
    4. Place under the grill until cheese has melted, about 3-5 minutes.

    Always a winner great when the leeks are cut small with a small chilli chopped in to the cheese sauce  -  27 Jul 2016
