6 leeks (white part only), washed
40g plain flour
50g grated cheese
Salt and pepper
3 large slices of cooked ham, halved

Steam the leeks in a steel colander over a pot of boiling water, for 10 minutes. Drain and set aside for a few minutes to cool while you make the sauce.
To prepare the bechamel sauce: Melt the butter in a saucepan. Add the flour and mix well. When the mixture starts to bubble, pour the milk in one go into the saucepan and whisk. Simmer for 5 minutes, stirring constantly. Season with salt and pepper; remove from heat and add grated cheese.
Cool the leeks for 5 minutes then wrap a slice of ham around each one. Transfer the wrapped leeks to a buttered casserole dish. Pour over the sauce.
Place under the grill until cheese has melted, about 3-5 minutes.
