About this recipe: Here is a light version of the classic vanilla dessert. It's delicious as is or with a fresh fruit puree.


Serves: 4 

  • 3 gelatine sheets
  • 400ml light single cream substitute
  • 100ml semi-skimmed milk
  • 2 tablespoons caster sugar (or sweetener)
  • 1 vanilla bean pod
  • Strawberry coulis for serving (optional)

  1. Add cold water to a bowl and dip the gelatine sheets in the water for 10 minutes. Drain and leave the sheets in the bowl.
  2. Mix the cream, milk and sugar in a saucepan. Slice the vanilla bean lengthwise and scrape out the seeds; add the seeds and the pod to the pan. Cook over low heat but do not bring to the boil.
  3. Remove the vanilla bean from the cream mixture and pour the cream onto the gelatine sheets stirring constantly to dissolve.
  4. Pour the cream into 4 ramekins or glass bowls. Cool then cover with clingfilm then refrigerate for at least 4 hours.
  5. Serve in moulds or remove and place on dessert plates. Decorate with fruit coulis or fresh berries.
