About this recipe: Mustard greens are cooked with bacon and vinegar, and spiced with cayenne. You could also try this recipe using Swiss chard.


Serves: 4 

  • 6 rashers bacon
  • 1 bunch mustard greens, rinsed and trimmed
  • 5 tablespoons red wine vinegar
  • salt and freshly ground black pepper to taste
  • cayenne pepper to taste

  1. Place bacon in a large, deep frying pan. Cook over medium high heat until evenly brown.
  2. Bring a large pot of water to the boil. Add greens, bacon (with dripping), vinegar, salt, black pepper and cayenne pepper.
  3. Boil until greens are tender, about 30 minutes.
