My blueberry jam


    This is one of my favourite jams and it's very easy to do. I start it then I do other things around the house and just keep an eye on the thermometer until the jam is ready!

    Makes: 4 (250g) jars

    • 1kg blueberries
    • 1kg caster sugar
    • 1 lemon, juice only

    1. Put the jars and lids in a saucepan filled with water. Bring to the boil to sterilize. Remove the jars with tongs and drain on a clean tea towel.
    2. Add the fruit, sugar and lemon juice to a large saucepan or jam pan, clip a jam thermometer on the edge of the pan and heat.
    3. The jam will start to foam. When the thermometer reaches 105 degrees C turn off the heat.
    4. Ladle the jam into jars, leaving some space at the top and close the lids.
