500g plain flour
1 tablespoon buckwheat flour
1 teaspoon salt
150g caster sugar
1 litre milk, divided
100g butter, melted
3 tablespoons dark rum

Mix the flour, salt and sugar in a bowl. Make a well with the flour and add eggs in the centre of the well. Pour 200ml milk into the egg mixture. Mix with a wooden spoon. Add another 150 ml of milk and mix until smooth. Add the melted butter and stir. Add the remaining milk and the rum. et aside for 3 or 4 hours.
Set aside for 3 or 4 hours before cooking.
