Crepe mix

    I'm French and I invested in a Krampouz pan to make crepes (see photo) because I make these alot. A flat frying pan will work just as well. It's important to let the batter rest for a few hours.

    Makes: 8 

    • 500g plain flour
    • 1 tablespoon buckwheat flour
    • 1 teaspoon salt
    • 150g caster sugar
    • 3 eggs
    • 1 litre milk, divided
    • 100g butter, melted
    • 3 tablespoons dark rum

    1. Mix the flour, salt and sugar in a bowl. Make a well with the flour and add eggs in the centre of the well. Pour 200ml milk into the egg mixture. Mix with a wooden spoon. Add another 150 ml of milk and mix until smooth. Add the melted butter and stir. Add the remaining milk and the rum. et aside for 3 or 4 hours.
    2. Set aside for 3 or 4 hours before cooking.
