A hearty beef stew that's packed with plenty of veg. Serve with boiled potatoes and Dijon mustard.

Ingredients
Serves: 6
500g beef shoulder
1kg beef stew meat
500g carrots, peeled and halved
500g leeks, sliced
1 medium turnip, peeled and chopped
1 bouquet garni (bay leaf, thyme, parsley)
1 onion, studded with cloves
12 black peppercorns
A pinch of salt
1 small cabbage, sliced

Put the meat in a large stock pot then add the carrots, leeks, turnips, bouquet garni, onion and peppercorns. Add 4 litres of cold water. Simmer on low heat for 3 hours.
One hour before the end of the cooking time, slice the cabbage and add it to the stock pot.
