My grandpa's beef stew

    A hearty beef stew that's packed with plenty of veg. Serve with boiled potatoes and Dijon mustard.

    Ingredients
    Serves: 6 

    • 500g beef shoulder
    • 1kg beef stew meat
    • 500g carrots, peeled and halved
    • 500g leeks, sliced
    • 1 medium turnip, peeled and chopped
    • 1 bouquet garni (bay leaf, thyme, parsley)
    • 1 onion, studded with cloves
    • 12 black peppercorns
    • A pinch of salt
    • 1 small cabbage, sliced

    Method

    1. Put the meat in a large stock pot then add the carrots, leeks, turnips, bouquet garni, onion and peppercorns. Add 4 litres of cold water. Simmer on low heat for 3 hours.
    2. One hour before the end of the cooking time, slice the cabbage and add it to the stock pot.
