Onion Jam

    Great to make for food gifts, or to serve with cold meats and cheese instead of Branston Pickle.

    Serves: 6 

    • 120ml oil
    • 250g onions, peeled and thinly sliced
    • 100ml red wine
    • salt and pepper to taste
    • 30g caster sugar

    1. Heat the oil in a saucepan over medium heat. Add the onions and cook over low heat until tender. Season with salt and pepper. Stir in the wine, continue to cook over low heat. Add sugar and cook down until wine has evaporated.
