Slow cooker bbq pork

    I cook the pork and onions in stock in a slow cooker and leave it on low all day while I'm at work. Then all you have to do is make the sauce when you get home in the evening. Serve with rolls and coleslaw. Sometimes I serve it over pasta.

    Serves: 6 

    • 1 onion, diced
    • 200ml beef stock
    • 1.5kg pork fillet, sliced
    • For the barbecue sauce
    • 700g ketchup
    • 1 tablespoon Worcester sauce
    • 1 teaspoon tabasco or chilli sauce
    • 1 tablespoon dark brown sugar
    • 1 teaspoon Dijon mustard
    • 1 teaspoon white vinegar
    • 1 teaspoon ground pepper

    1. Add the onion, stock and sliced pork fillet to a slow cooker and cook for 9 hours on low.
    2. To make the barbecue sauce: Place all the ingredients for the sauce in a saucepan. Cook over low heat for 10 minutes.
    3. Transfer the pork and onions to a serving plate and pour over the barbecue sauce.
