    About this recipe: This is a refreshing, cool and spicy summer salsa. You can use fresh coriander instead of basil. Serve with barbecued fish, chicken or pork or simply as a party nibble with tortilla crisps.

    Serves: 10 

    • 2 mangos - peeled, stones removed and diced
    • 2 peaches - stones removed and chopped
    • 2 cloves garlic, minced
    • 2 tablespoons chopped fresh root ginger
    • handful chopped fresh basil
    • 2 red chillies, diced
    • 4 tablespoons fresh lime juice

    1. In a large bowl, mix together the mangos, peaches, garlic, ginger and basil. Add the chillies and lime juice to taste; mix well. Allow to sit 2 hours before serving.
