Quick chicken breasts with lemon and rosemary

    I love the smell and taste of fresh rosemary. As soon as I get the chance to add some, I go for it. Maybe a little too much sometimes!

    Serves: 4 

    • 3 lemons
    • 1 tablespoon olive oil
    • 4 chicken breasts
    • a few sprigs fresh rosemary

    1. Squeeze 3 lemons. Pour the juice into a bowl and add the olive oil. Add the fresh rosemary. Add the chicken breasts and spoon over the lemon-olive oil marinade.
    2. Heat a frying pan over medium heat. Add chicken breasts from the bowl and cook for 5 minutes on each side.
    3. Pour over the marinade and simmer for 5 minutes. Season with salt and pepper.

    Other options:

    The chicken breasts can also be cooked on a bbq or under the grill.

    Quick, easy and really delicious. I shall make this often. Ate with yesterday's left over new potatoes browned in butter and olive oil, and a crispy salad.  -  26 Jan 2016
