If I'm stuck for ideas, I know I can serve this quiche any night of the week. It's also perfect for a weekend lunch. Serve with green salad.

3 eggs
150g Comte or other strong cheese, grated
100ml milk
1 onion, finely chopped
2 red peppers, chopped
1 tablespoon olive oil
salt and pepper to taste
1 (375g) sheet shortcrust pastry

Preheat the oven to 180 C /Gas 4.
Heat 1 tablespoon of olive oil in a frying pan over low heat. Cook the onion for 5 minutes. Add red peppers, cook for a few minutes to soften.
Beat the eggs in a bowl. Add grated cheese, milk, salt and pepper; mix well.
Roll out the pastry on a floured surface. Line a quiche or pie tin with the pastry. Arrange peppers and onions in the pastry case and pour over egg-cheese mixture.
