About this recipe: For big family occasions, I usually cook a capon when I can get one from my local farm shop but a large organic chicken works well and are easier to come by. It can be served with chestnuts in season, green veg and roast or fried potatoes. Use a roasting rack if possible.

  • 3kg capon or organic chicken
  • 50g butter, softened

  1. Preheat the oven to 200 C / Gas 6.
  2. Rub the chicken with butter and set in a roasting rack inside a roasting tray. To get a crispy skin, remove the chicken from the oven every 30 minutes and baste with the juices, until the juices run clear, about 1 1/2 hours.
