Roasted Leg of Lamb

    You're wondering why I'm even adding this recipe with one ingredient...well, I like to roast good quality lamb with nothing else so we can really taste all the flavours and serve the meat medium rare.

    Serves: 6 

    • 2.5kg leg of lamb

    Prep:5min  ›  Cook:1hr15min  ›  Ready in:1hr20min 

    1. Preheat the oven to 180 C / Gas 4. Transfer the leg to a roasting tin and roast for 1 1/4 hours.
    2. After one hour, remove the lamb from the oven and baste with the juices. Place back in the oven.
    3. After 15 minutes, remove and slice, keeping the juices. Transfer the lamb back into the roasting tin, leave for a few minutes to absorb all the flavours, then serve.
