Smoked Salmon and Tomato Quiche

    This recipe is ready in 30 minutes. I serve it warm with a salad on the side and eat the leftovers for lunch at the office the next day. In short, a winner!

    Serves: 8 

    • 1 (375g) ready rolled shortcrust pastry sheet
    • 3 eggs
    • 100g cream or creme fraiche
    • 200g grated ComtĂ© cheese
    • 50g cherry tomatoes
    • 3 slices smoked salmon, cut into strips

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Preheat the oven to 180 C / Gas 4.
    2. Mix the eggs with the cream and grated cheese in a bowl.
    3. Roll out pastry and line a quiche tin. Pour the egg and cheese mixture into the pastry case. Add the cherry tomatoes and strips of salmon.
    4. Bake for 30 minutes. Serve warm or cold.

    I love this quiche sooooo much and it tastes AMAZING!!! I made a few changes - I used cheddar cheese instead of comtĂ© cheese and I took out the tomatoes. I also put most of the smoked salmon (about 2 slices) into the quiche mixture and sprinked the rest on top and I put most of the cheese into the mixture, but again, left some to sprinkle on top. A really tasty recipe which everyone loved!!!  -  02 Jan 2014
