Salmon Stuffed with Goats Cheese and Pesto

    Goats cheese, sun-dried tomatoes and pesto make an irresistible blend of flavours that go well with salmon. Enjoy!

    Serves: 6 

    • 1.4kg salmon, sliced into 2 fillets
    • 200g fresh goat cheese
    • 100g fresh pesto
    • 100g sun-dried tomatoes in oil, drained and diced
    • Salt, pepper to taste

    1. Preheat the oven to 180 C / Gas 4. Arrange a sheet of foil inside a roasting tin. Set one salmon fillet, skin side down on the foil.
    2. Mix the goats cheese and pesto. Spread this mixture on the salmon fillet and sprinkle over the diced sun-dried tomatoes.
    3. Place the second fillet on top, tie with kitchen twine or secure with a skewer. Roast for thirty minutes.
