About this recipe: This recipe is impressive because it's just like eating at a good restaurant but it's very easy to make.


Serves: 4 

  • knob of butter
  • 500g fresh spinach leaves, washed, stems removed
  • 1 small onion, chopped
  • 4 Dover sole fillets
  • 4 slices of parma ham

Prep:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Preheat the oven to 180 C / Gas 4.
  2. Add the spinach leaves and chopped onion to a saucepan with a knob of butter. Cook over low heat for 3 minutes.
  3. Lay the fillets out, then add a slice of parma ham and a layer of the spinach mixture. Roll the fillet up and close with a skewer.
  4. Transfer the rolls to a baking dish and bake for 10 minutes until the sole fillets are cooked through. Serve with the remaining spinach.
