Spinach Fatayers

    These are usually served as part of a mezzé in Middle Eastern countries. They are little pastry snacks stuffed with fresh spinach and pine nuts.

    Makes: 12 

    • 200g plain flour
    • 1 teaspoon baking powder
    • 1 tablespoon olive oil
    • 200ml water
    • 400g fresh spinach, chopped and squeezed to remove water
    • 250g onions, peeled and minced
    • 50g pine nuts
    • 1 lemon, juice only
    • 1 tablespoon olive oil
    • 1 tablespoon sumac spice
    • salt and pepper to taste

    1. Add the flour, olive oil, salt, water and baking powder to a food processor and mix on low speed for 5 minutes. The dough must detach from the side of the bowl, if not then add a little flour. Remove the dough and transfer into a bowl then set aside for 10 to 20 minutes.
    2. Preheat the oven to 180 C / Gas 4.
    3. To prepare the filling: Mix the onions, spinach, pine nuts, lemon juice, olive oil, salt, pepper and sumac.
    4. Lightly flour your work surface. Roll the dough out until thin and cut out 8cm diameter circles.
    5. Add 1 tablespoon of stuffing in the centre of each circle and fold to make a triangle. Close and seal to ensure that it does not open while cooking. Place on a greased baking tray and bake for 10 to 15 minutes.
