About this recipe: I really enjoy stuffed tomatoes and this is a delicious way to use up leftover meat from your Sunday roast. Serve with rice, if you like.


Serves: 4 

  • 2 or 3 tablespoons breadcrumbs
  • leftover roast meat, diced
  • 1 garlic clove
  • 1 teaspoon fresh parsley, chopped
  • 1 large tomato per person
  • 2 eggs, beaten
  • olive oil

  1. Cut the top of the tomato and keep them for later. Scoop out the seeds and pulp. Set the tomatoes in a baking dish.
  2. Mix the meat with garlic and parsley; add 2 tablespoons breadcrumbs, beaten eggs and tomato pulp.
  3. Preheated the oven to 180 degrees C / Gas 4.
  4. Shape the stuffing into a ball and insert into the tomatoes. Put the tops back on.
  5. Sprinkle with the remaining breadcrumbs and drizzle with olive oil. Bake for 30 minutes.
