Lamb or veal kidneys with mushrooms

    Choose lamb or veal kidneys for this dish. They are delicious fried with mushrooms and onions, then served on toast.

    Serves: 4 

    • 2 lamb or veal kidneys, white parts removed and chopped
    • 400g mushrooms, sliced
    • 2 large shallots (or 1/2 mild onion) finely minced
    • 2 tablespoons olive oil
    • 1 teaspoon fresh chopped parsley

    1. Heat 1 tablespoon olive oil in a frying pan over low heat. Add the kidneys and cook over low heat for 15 minutes, or until cooked through.
    2. In another frying pan, cook the shallots with one tablespoon of olive oil. Add the mushrooms, simmer 15 minutes, or until alot of the water has evaporated from the mushrooms.
    3. Mix in the kidneys and garnish with fresh parsley.
