Homemade jammy dodgers

    Soft shortbread flavoured with vanilla and strawberry jam. Just made a batch for my husband who loves them with a cuppa.

    Makes: 16 biscuits

    • 225g butter, softened
    • 125g caster sugar
    • 1 teaspoon vanilla extract
    • 250g plain flour
    • 170g strawberry jam

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 180 C / Gas 4.
    2. In a medium bowl, cream together the butter and sugar until smooth. Mix in vanilla extract, mix in flour until dough comes together.
    3. Roll dough into small golf ball-size balls and place on an ungreased baking tray. Make a big enough dent in the centre of each ball to accommodate 1 teaspoon of strawberry jam.
    4. Bake until lightly golden, about 20 minutes. Let cool for 5 to 10 minutes.

    Really easy to make, though what helps is to chill dough for 3 or 4 mins to make it easier to roll it into balls, plus I had no butter so used Stork and according to my bunch of critics they were fine and they are tough ! My family have voted this the best ever biscuits in the world.  -  24 Apr 2016
