    About this recipe: An easy to make Spanish omelette with eggs, onion and plenty of cheese. You could easily add other vegetables, like potatoes.

    Serves: 6 

    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 2 roasted red peppers, chopped
    • 300g fresh spinach
    • 6 eggs, beaten
    • 350g (12 oz) grated Manchego cheese
    • salt and pepper to taste

    1. Preheat oven to 180 C / Gas mark 4. Lightly grease a 23cm (9 in) pie dish.
    2. Heat oil in a large frying pan over medium high heat. Add onions and cook, stirring occasionally, until soft. Stir in red peppers and spinach, and continue cooking until spinach has wilted and excess moisture has evaporated.
    3. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie dish.
    4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.


    You can use frozen spinach for ease; simply defrost before adding to the pan.

    Made it healthier. My husband lost nearly 2 stone on a low-carb diet, and this is his favourite breakfast! I bake a quiche each Sunday night, and he just heats up a slice before work. I cut the cheese by 1/3 and also add about 100g of lean chopped ham, along with a little minced garlic. Delicious! - 15 Sep 2008


    Altered ingredient amounts. This is great and super easy. I was looking for a quiche without the pastry! I made it for my friends and they raved. I am making it again today (Sunday) so that I can have it for breakfast during the week. Heats up great. I use less cheese and I also had a little bit of fresh nutmeg. - 15 Sep 2008


    Something else. Instead of one large quiche, I pour the mixture into the bottoms of a greased muffin tin, a little less than half full. It makes bite sized portions that are perfect for a party. My friends always ask me for "my recipe"! Easy and delicious. Oh, I use whatever grated cheese is on offer at the supermarket. - 15 Sep 2008
