Spinach and Manchego tortilla

    An easy to make Spanish omelette with eggs, onion and plenty of cheese. You could easily add other vegetables, like potatoes.

    Serves: 6 

    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 2 roasted red peppers, chopped
    • 300g fresh spinach
    • 6 eggs, beaten
    • 350g (12 oz) grated Manchego cheese
    • salt and pepper to taste

    1. Preheat oven to 180 C / Gas mark 4. Lightly grease a 23cm (9 in) pie dish.
    2. Heat oil in a large frying pan over medium high heat. Add onions and cook, stirring occasionally, until soft. Stir in red peppers and spinach, and continue cooking until spinach has wilted and excess moisture has evaporated.
    3. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie dish.
    4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.


    You can use frozen spinach for ease; simply defrost before adding to the pan.
