Carrot and chilli salad

    A crunchy grated carrot salad, spiced up with chilli and sesame oil that is very popular in many Chinese homes. This salad tastes best served chilled.

    Serves: 4 

    • 250g carrots, peeled and coarsely grated
    • 1 teaspoon salt
    • 2 tablespoons soy sauce
    • 1/2 teaspoon sugar
    • 2 tablespoons chilli oil
    • 1 teaspoon sesame oil

    1. Place grated carrots in a bowl and season with salt; mix well and set aside for 15 minutes before draining off any excess liquid.
    2. Combine soy sauce, sugar, chilli oil and sesame oil; pour over carrots and mix well.
