Spicy Sichuan cucumber salad

    Serves: 4 

    • 2 cucumbers, peeled, seeded and cut into 5cm strips
    • 2 teaspoons vegetable oil
    • 3 dried red chillies
    • 2 cloves garlic, crushed
    • 3/4 teaspoon salt
    • 1/2 teaspoon sesame oil
    • 1/2 teaspoon rice vinegar

    1. Place cucumber strips in a bowl; cool in fridge for 10 minutes while preparing the dressing.
    2. Heat oil in a wok over medium heat; add the dried chillies and fry until dark red. Transfer the chillies and oil to a plate; slice chillies if desired.
    3. Season chilled cucumbers with salt, garlic, warm chillies with oil, sesame oil and vinegar; toss well and serve.
