    About this recipe: A light, fluffy protein-packed omelette made using egg whites, with a bit of cottage cheese and mashed banana stirred in.

    Ingredients
    Serves: 1 

    • 1 egg white
    • 1 tablespoon cottage cheese
    • 1/2 medium banana
    • 1 tablespoon olive oil
    • 1 slice bread, toasted

    Method
    Prep:15min  ›  Cook:5min  ›  Ready in:20min 

    1. Place egg white and cottage cheese in a bowl and whisk.
    2. Mash the banana and add to the bowl; whisk again.
    3. In a non stick frying pan, add the olive oil and heat. Pour in the mixture and cook for 2 mins.
    4. After one side has cooked, place the pan under the grill and cook for 3 minutes, or flip the omlette over like a pancake, if you like.
    5. Place the toast on top of the omlette and flip it over onto a plate.

    I wasn't too sure about this before making it, but it tastes good. The banana gives it a sweet flavor so that makes it taste good whether on the toast or not. It is pretty difficult to flip and needs more cooking time than just 2 minutes on the first side in order to keep it from falling apart. I did cut the olive oil to 1 teaspoon. - 15 Feb 2016
