About this recipe: A light, fluffy protein-packed omelette made using egg whites, with a bit of cottage cheese and mashed banana stirred in.
I wasn't too sure about this before making it, but it tastes good. The banana gives it a sweet flavor so that makes it taste good whether on the toast or not. It is pretty difficult to flip and needs more cooking time than just 2 minutes on the first side in order to keep it from falling apart. I did cut the olive oil to 1 teaspoon. - 15 Feb 2016
