Easy Strawberry Tart

    Sliced strawberries are coated with a strawberry jam glaze, arranged on a digestive biscuit base, chilled and served with whipped cream. A lovely summer barbecue or picnic dessert that children simply adore.

    Serves: 8 

    • 150g (5 oz) caster sugar
    • 225ml (8 fl oz) water
    • 4 tablespoons strawberry jam
    • 4 tablespoons cornflour
    • 1kg (2 1/4 lb) sliced fresh strawberries
    • 1 (23cm / 9 in) digestive biscuit base

    1. Mix together the sugar, water, jam and cornflour in a medium large saucepan. Boil for one minute. Remove from heat.
    2. Stir in the sliced strawberries, and toss until well coated. Pour into the digestive biscuit base.
    3. Chill until well set. Serve topped with whipped cream.

    Can youu use pastery instead of Digetive base  -  27 Jun 2010


    A very useful glaze but too much for a single punnet of strawberries (400-500g)! I also use a ready made sponge flan case from a well known supermarket! For a punnet of strawberries I reduced the glaze as follows - 6fl oz Water; 1 tablespoon of Cornflour; 1heaped tablespoon of Sugar; 2 dessertspoons of Strawberry Jam; brought to boil and simmered gently for a minute. The glaze loses its artificial taste once the fresh fruit is added, and then tastes delicious. Blueberries with blackcurrant jam is excellent too. When the strawberry season is over, tinned fruit can be used instead - I have already tried the reduced glaze with a tin of Apricots, using the juice for the glaze and apricot jam.
