Spicy Chilli Squid

    I cook the squid in garlic, soy sauce, chilli oil and butter. It's a simple but delicious combination.

    Serves: 4 

    • 2 tablespoons soy sauce
    • 4 dashes (or more) chilli oil
    • 2 cloves garlic, finely grated
    • 1 teaspoon grated ginger
    • 800g cleaned squid (fresh or frozen), chopped
    • 2 tablespoons butter, divided
    • lemon juice, for serving

    1. Mix together soy sauce, chilli oil, garlic and ginger; set aside.
    2. In a frying pan or wok, over medium heat, melt 1 tablespoon butter and stir-fry squid. As squid is cooking, add in the soy-ginger sauce and mix well.
    3. Once sauce has cooked down, turn off the heat completely, and mix in remaining butter. Adjust seasoning to your own taste, then serve hot! You can even squeeze lemon on top if you wish.
