    About this recipe: An easy choice when you need to rustle up something for yourself and happen to have leftovers like rice and bacon and vegetables that need to be used up. This recipe is versatile - use whatever you like.

    Serves: 1 

    • 1/2 tablespoon butter
    • 1/4 onion, sliced onion, sliced
    • 1/4 courgette, sliced
    • 30g mushrooms, sliced
    • 1/2 red pepper, sliced
    • 1 or 2 small tomatoes, sliced
    • salt and pepper, to taste
    • 1 or 2 slices cooked bacon, chopped
    • 1 bowl leftover cooked rice, warmed in microwave
    • 1/2 teaspoon paprika
    • tomato ketchup, to taste
    • 2 eggs, lightly beaten
    • 1 pinch salt

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Heat butter in a pan over medium heat, and gently cook all the vegetables.
    2. Add bacon, warm rice, pinch salt, a little pepper, paprika and tomato ketchup. Stir well.
    3. In a separate non-stick frying pan over medium heat, cook the beaten eggs. When set, serve on top of rice mixture.

    5 stars for any recipe that helps me clean out my fridge! I used black rice and made a couple of substitutions. For starters, prosciutto cotto instead of bacon as well as opted for Sriracha sauce instead of ketchup. The butter was a bit heavy for me, so I will probably use a light oil next time.     Given this was considered an omelette recipe for leftovers I decided to use vegetables I already had. I think salsa as opposed to tomato and ketchup would be a better idea. I did not add any salt because the bacon is salty enough.  -  07 Mar 2016  (Review from Allrecipes US | Canada)


    What a great way to use leftovers. It is fair to say that only onion, rice and peppers were my leftovers in my fridge for the rest I had to shop . I added to the recipe a clove of garlic as I think is delicious and goes so well with the vegetables and bacon.
