This lotus root salad is crunchy and sweet. It's flavoured with curry powder and topped with sesame seeds and radish sprouts. Legend in Japan says that the many holes in the lotus root mean good fortune - try it and see!

1 fresh lotus root, peeled and sliced into chunks
pinch of salt
2 tablespoons mayonnaise
1 tablespoon curry powder
2 teaspoons caster sugar
1 tablespoon soy sauce
1 tablespoon oyster Sauce
2 tablespoons toasted sesame seeds (crushed)
freshly ground black pepper, to taste
1 bunch radish sprouts

Place lotus root in a pot; cover with boiling water and add a pinch of salt. Simmer over medium heat for 3 minutes, or until soft; drain and pat dry. Set aside to cool.
Combine mayonnaise, curry powder, caster sugar, soy sauce and oyster sauce together in a bowl until creamy; add the cooled lotus root and toss to coat.
Sprinkle sesame seeds on top and season with freshly ground black pepper; garnish with radish sprouts and serve.
