Carrot and Grapefruit Salad

    A simple, yet refreshing Japanese orange and citrus salad or side dish that will brighten up any meal. You can easily double the quantities.

    Serves: 1 

    • 1 tablespoon white wine
    • 1 tablespoon vegetable oil
    • salt and pepper, to taste
    • 1 small carrot, grated
    • 1 grapefruit or pomelo, peeled and segmented

    1. To make the dressing: combine vinegar and oil in a bowl or cup. Whisk to mix evenly. Add salt and pepper to taste.
    2. Place grated carrots and grapefruit segments in a bowl; mix well. Pour over dressing and serve.
