Rub salt into beef or pork tongue and set aside for 5 minutes. Bring a pot of water to the boil. Briefly dip tongue meat into boiling water for 30 seconds, then remove and shake off excess water.
Heat sesame oil in pan over medium heat, add sliced garlic and fry gently for 1 or 2 minutes. Add green onions and stir until softened. Add slices of meat (using more sesame oil if needed) and stir fry briefly. Finally add sake, salt and pepper, and concentrated chicken stock to taste. Serve hot.
