About this recipe: This is a Japanese stir fry dish with pork or beef tongue, lots of garlic and spring onions. If you prefer to use pork fillet you can.


Serves: 2 

  • 200g beef or pork tongue, very thinly sliced
  • pinch salt
  • 1/2 tablespoon sesame oil
  • 250g spring onions, sliced into rings
  • 2 cloves garlic, sliced
  • 1 tablespoon sake (rice wine)
  • pinch pepper
  • 1/2 teaspoon dashi powder (or concentrated chicken stock)

  1. Rub salt into beef or pork tongue and set aside for 5 minutes. Bring a pot of water to the boil. Briefly dip tongue meat into boiling water for 30 seconds, then remove and shake off excess water.
  2. Heat sesame oil in pan over medium heat, add sliced garlic and fry gently for 1 or 2 minutes. Add green onions and stir until softened. Add slices of meat (using more sesame oil if needed) and stir fry briefly. Finally add sake, salt and pepper, and concentrated chicken stock to taste. Serve hot.
