I had a lot of left over vegetables and some brown rice in my fridge, so I thought I'd make a quick fried rice for one!

1 tablespoon olive oil
1/4 onion, chopped
1 celery stick, chopped
2 small tomatoes, chopped
a few mushrooms, cleaned and sliced
140g leftover cooked white or brown rice
dash paprika (or red pepper)
1 tablespoon ketchup
a bit freshly chopped parsley
salt and pepper
1 tablespoon butter
1 egg, beaten

Heat the oil until hot, and cook the onions and celery until they've softened. Add the mushrooms and tomatoes and stir until cooked.
Add rice; stir in well and season with paprika, 1 tablespoon ketchup, parsley, salt and pepper.
Melt butter in a pan over low heat. Pour in beaten egg and stir gently until nearly scrambled over low heat. Add them to the rice mixture and stir to cook completely. Remove from heat and put on a serving plate.
