Tempura Batter for Fish

    Tempura adds a nice crispy layer to any small firm fish or to pieces of cod or lemon sole.

    Serves: 2 

    • oil for frying
    • 1 egg
    • 115ml water
    • 115g self raising flour
    • 250g firm white fish fillets

    1. Heat oil in a deep fat fryer or heavy based saucepan until it reaches 190 degrees C.
    2. To make the tempura batter: Beat the egg in a bowl and add water. Gradually add the self raising flour, stirring gently until well mixed.
    3. Coat fish in tempura batter and fry in hot oil for 2 or 3 minutes, or until golden brown.

    This is lovely!Im trying to make fish appealing to the kids and although I dont like to use the fryer too often I dont suppose once a week is too bad!!! I cut the fish into bite size pieces a bit like nuggetts!!!  -  20 Apr 2012
