Spicy prawn and garlic pasta

    This is a very tasty, quick and healthy dish made up by one of my work colleagues. Prawns are sauteed with fresh tomatoes, parsley, lemon and chillies, and served over pasta.

    Serves: 2 

    • 110g any pasta
    • 4 tablespoons extra virgin olive oil
    • 1 onion, finely chopped
    • 1 stick celery, finely chopped
    • 3 cloves garlic, finely chopped
    • 2 chillies, deseeded and finely chopped
    • 400g large uncooked prawns
    • 4 large tomatoes, chopped into small pieces
    • 1 bunch flat leaf parsley, roughly chopped
    • 1 lemon, juiced
    • ½ teaspoon caster sugar
    • sea salt and fresh ground pepper

    1. Bring a large pot of salted water to the boil and cook the pasta until tender with a bite at the centre, about 15 minutes. Drain and keep warm.
    2. Meanwhile, heat oil in a large frying pan and gently fry the onion, celery and garlic until soft.
    3. Add the chillies and fry for about 5 minutes, then add the prawns.
    4. Cook for a few minutes more, then add the tomatoes and parsley.
    5. Cook for 5 minutes, then add the lemon juice and sugar.
    6. Cook for another 5 minutes then serve with a pasta of your choice. Season with salt and pepper.
