Diet muffins with oat bran and muesli

    I like making desserts with oat bran. I added some other ingredients like muesli, honey and a scoop of whey protein powder, and it turned out both a great dessert and meal replacer. You can rearrange the measures in this recipe to suit your taste.

    Makes: 6 muffins

    • 6 tablespoons natural yoghurt
    • 1 tablespoon baking powder
    • 3 tablespoons oat bran
    • 3 large eggs (or 4 small)
    • 3 tablespoons muesli
    • 3 tablespoons honey

    1. Preheat the oven to 180 C / Gas 4. Line a muffin tin with 6 cupcake cases.
    2. Mix the yoghurt and baking powder in a bowl until well mixed. Add the remaining ingredients and mix together.
    3. Leave the mixture for 20 minutes to let the bran and muesli soak. Fill muffin cups 2/3 full.
    4. Bake until a skewer comes out clean, around 20 minutes.


    You can use whatever you want and like: cocoa powder, carob powder, smashed banana, grated apple, berries or nuts.

    Make it healthier

    You can reduce the honey if you add more dried fruits, banana or carob. Also, if you'd like to use the muffins as a meal substitute, put in 1 or 2 scoops of whey protein powder.

    These did not work burnt on top and soggy bottoms  -  11 Feb 2013


    These muffins are bland, taste a little like sawdust, definitely not a sweet treat in any way. Also, took approx 25 minutes to cook.  -  14 Oct 2012
