    About this recipe: A really quick and easy, simple pizza with puff pastry as the base. I have made this with mozzarella, pepper and chorizo but you could make with any of your favourite pizza toppings.

    Ingredients
    Serves: 2 

    • 1/2 packet Jus Rol® puff pastry
    • 2 teaspoons tomato puree
    • 1/2 mozarella cheese ball, sliced
    • several slices chorizo, diced
    • 1 pinch dried oregano
    • 1 handful sliced roasted red pepper (Iuse the ready made roasted peppers from the jar)

    Method
    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Preheat the oven to 220 C / Gas 7. Line a baking tray with parchment paper. Roll out the pastry to a rectangle about 1cm thick (freeze the remaining half of the pastry packet). Cut the rectangle in half so that you have 2 individual pizza tarts. Place onto the baking tray.
    2. Cut into the pastry slightly to indent a border. Spread a teaspoon of tomato puree within the border on each half. Add the cheese then the remaining ingredients.
    3. Bake in the oven until risen and golden, about 20 minutes. Serve.

    My husband loves chorizo and since I had leftover puff pastry AND chorizo, this was a great find! Very tasty and easy to make. - 06 Feb 2013
