    About this recipe: A delicious savoury snack using St Helen's Farm® goats' dairy products. Pastry whirls are filled with sausage, salami, goats' cheese and herbs.

    Ingredients
    Makes: 8 whirls

    • 100g (4oz) sausage meat
    • 75g (3oz) salami, roughly chopped
    • 1 large onion, finely chopped
    • 75g (3oz) St Helen's Farm goats' cheese, grated
    • 1/2 teaspoon dried basil
    • 1 pinch black pepper
    • 225g (8oz) plain flour
    • 1 tablespoon baking powder
    • 1 pinch salt
    • 40g (1½oz) St Helen's Farm goats' butter
    • 150ml St Helen's Farm fresh goats' milk

    Method

    1. Preheat the oven to 230 C / Gas 8.
    2. Mix the sausage meat, salami, onion and grated cheese together with the basil and a little pepper.
    3. Sift the flour, baking powder and a pinch of salt into a bowl and rub in the butter. Bind to a soft dough with the milk.
    4. Roll out the dough to form a rectangle about 30cm x 18cm and spread the mixture over the surface.
    5. Roll up from the narrow edge and cut into eight pieces using a large sharp knife. Try to cut using a sawing action rather than pressing too heavily on the mixture.
    6. Place cut side down on a lightly oiled baking sheet.
    7. Bake for about 15 minutes, then leave to cool on a wire rack.
