Amazing apple muffins

    Really simple but delicious apple muffins with cinnamon and honey. Yummy at breakfast, as a snack or with custard for pudding! They won't be around for long.

    Serves: 12 

    • 75g margarine
    • 250g self-raising flour
    • 1 teaspoon bicarbonate of soda
    • 3/4 teaspoon ground cinnamon
    • 1 pinch salt
    • 115g light brown soft sugar
    • 2 medium eggs
    • 125ml milk (semi-skimmed is fine)
    • 1 teaspoon vanilla extract
    • 2 Cox or Braeburn apples, grated
    • 1 tablespoon honey

    1. Preheat the oven to 190 C / Gas 5. Line a muffin tray with paper cases.
    2. Melt the margarine in a pan and leave to cool while preparing the other ingredients.
    3. Sift together the flour, bicarbonate of soda, cinnamon, salt and sugar in a large bowl.
    4. In a separate bowl, beat together the eggs, milk, vanilla extract and melted margarine.
    5. Grate the apples and stir in the honey.
    6. Make a well in the center of the dry ingredients and pour in the egg mixture and grated apples and stir roughly with a fork until a lumpy paste. Don't over mix! Fill the cases almost to the top.
    7. Bake in the preheated oven for 20 minutes.
    8. Rest in the tray for 5 minutes before placing on a wire rack to cool completely.


    This recipe also works for banana muffins. Just remove the apples and add 2 well-mashed bananas instead, and for extra spice 1/4 teaspoon of nutmeg. Can be frozen.
