    About this recipe: A traditional Welsh cawl recipe made in the slow cooker. This slow cooker cawl couldn't be easier! Feel free to add leek instead of onion, if desired, and make sure to save some leftovers - cawl is even better the next day!

    Ingredients
    Serves: 4 

    • 2kg lamb neck, cut into 2-3cm cubes
    • 5 potatoes, peeled and cut into large chunks
    • 2 carrots, cut into large chunks
    • 1 parsnip, cut into large chunks
    • 1/2 swede, cut into large chunks
    • 2 leeks, thickly sliced
    • 1 onion, chopped
    • salt and black pepper to taste
    • 1 bay leaf

    Method
    Prep:30min  ›  Cook:2hr  ›  Ready in:2hr30min 

    1. Place all ingredients into a slow cooker and add 350ml water to cover.
    2. Cover and cook on low setting for 8 to 10 hours. Season again before serving, if desired.

    Tip

    If there's too much liquid at the end for your liking, sift in a touch of flour and allow to boil to thicken.

    I too used stock instead of water. I only used 1kg of lamb as 2 kg would not have fit in my slow-cooker. As it was it was an hour into cooking before the lid would fit properly. Plenty left for another meal, I think this would easily feed 6. - 01 Mar 2014

    This was lovely. I used vegetable stock instead of water and found that 4 to 5 hours on High was perfect. I added a few more leeks too to use up what was in the fridge. Posted a pic of when I put it on to cook. - 31 Jan 2014

    I also used stock not just water. I also used sweet potatoes and added in some pearl barley. A hearty tasty stew - 25 Oct 2014
