Mojo sauce

About this recipe: This recipe is my take on the Mojo Sauce served in Tenerife.

Serves: 4 

  • drizzle of oil for frying
  • 6 cloves garlic, crushed
  • 1/2 onion, finely chopped
  • 1 pinch cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 pinch each of marjoram, thyme and rosemary
  • 1 red pepper, finely chopped
  • 1/2 green chilli
  • 1 pinch sugar
  • 1 tablespoon balsamic vinegar
  • 1 glass white wine
  • 1 glass water

  1. Heat the oil in a saucepan. Add the garlic and onion. Fry for a few minutes.
  2. Add the paprika, pepper, marjoram, thyme and rosemary, red pepper, chilli and sugar. Fry for another few minutes.
  3. Add the wine, water and balsamic vinegar and simmer until reduced by half, or until the required consistency has been reached.
  4. Searve either hot or cold.
