Anna's Baked Pancake

    This is a large pancake which is the easiest and first thing I learned to cook from my Mom. It's perfect for unexpected guests or when you don't have time or desire to cook something difficult. It was my speciality when I was a student.

    Serves: 3 

    • 2 eggs
    • 200ml milk
    • 11 tablespoons plain flour
    • 70g butter
    • 100g grated yellow cheese or feta cheese
    • 100g chopped ham or other sausage

    1. Heat the oven to 180 C / Gas 4.
    2. Stir the eggs with the milk. Add the flour and stir until you get a homogenous mixture.
    3. Put the butter in an oven-proof frying pan to melt in the oven. The butter should brown before you pour in the batter.
    4. Pour the batter in the pan and bake for about 25 minutes.
    5. When the pancake is puffed and cooked in the centre, take the pan out of the oven.
    6. Sprinkle the pancake with the cheese and chopped ham.
    7. Fold over the pancake and it's ready to be served.
