Chicken lollipops with tomato sauce

    This weekend, why not get creative and cook something fun and healthy with your children? Here is a fabulously tasty recipe with a Mediterranean feel which is not only simple to make, but has a good helping of nutrition too, so you’ll be doing something good for yourself and your children!

    Serves: 6 

    • 1 onion, chopped
    • 4 garlic cloves
    • 50ml olive oil
    • 1kg ripe tomatoes, seeded and chopped, or tinned tomatoes
    • 1 teaspoon caster sugar
    • 1 teaspoon mixed dried oregano and thyme
    • salt and pepper
    • 400g chicken breast fillets, diced
    • 2 slices bread, made into breadcrumbs
    • 1 egg
    • 1 tablespoon chopped parsley
    • 1/2 teaspoon curry powder

    1. Peel and chop the onion and 2 cloves of the the garlic and lightly fry in a pan with a little oil. Once cooked, stir in the tomatoes which should be washed, cut and have the seeds removed. Lightly fry and add the sugar, oregano and thyme and season with salt and pepper. Stir the sauce with a wooden spoon. Puree the sauce in a blender and strain it if necessary.
    2. Rinse out the blender and add the remaining garlic, the diced chicken, the breadcrumbs, a beaten egg, parsley, curry, and a pinch of salt and pepper. Blend the mixture and put in the refrigerator to firm up.
    3. When it is cold, shape balls from the mixture of about 50g each and push a skewer into each ball. Flatten them a little so that they look like lollipops and cook them in a frying pan in the remaining olive oil.
    4. Serve with the tomato sauce.

    Other ideas

    You could also coat the lollipops in sesame seeds before cooking.
