Turkish Style Veggie Eggs

    This is a brilliant dish, so tasty and simple to prepare plus makes a brilliant hangover cure! Serve it up in a huge paella style dish with lots of crusty bread and dig in with your hands! You can add some spicy salami sausage for a meaty take on it! Halloumi cheese works well as an addition, too.

    Serves: 4 

    • 2 eggs per person
    • 1 or 2 red peppers, very finely diced
    • 1 yellow pepper, finely diced
    • 1 bunch of spring onions, finely sliced
    • 1 large courgette or a few baby ones, finely chopped and diced
    • 1 leek, finely diced
    • 1 red chilli (optional) finely diced
    • 1 teaspoon dried mint
    • Salt and pepper to taste

    1. Put all the veggies and chilli in a large frying pan, or or wok and sweat down on a low heat until glossy and softened.
    2. Whisk the eggs with the mint, salt and pepper.
    3. Throw the whisked eggs into the sweated veggies and gently stir constantly, until eggs are only just cooked and scrambled but still soft.
    4. Serve up to friends and family and devour!!!
