Scrumptious apple cake

    This lovely cake is a perfect way to use up apples. It is very easy to make and the result is a moist, soft, tasty cake which is also perfect for getting the kids to eat the fruit :)

    Makes: 1 A generous 28cm cake

    • 150g butter
    • 500g golden apples, peeled, cored and thinly sliced
    • 1 lemon (zest only)
    • 150g sugar
    • 1 pinch salt
    • 4 eggs
    • 150g plain flour
    • 7g yeast
    • icing sugar

    1. Preheat the oven to 180 C / Gas 4. Cover the base of a 28cm baking tin with baking parchment.
    2. Melt the butter in a pan. Take it off the heat and allow to cool.
    3. Mix the lemon zest, sugar and salt together in a bowl. Add the eggs and beat the mixture well until it is soft and fluffy.
    4. Stir the apples and cooled, melted butter together in a separate bowl.
    5. Mix the flour and yeast together in a separate bowl, add to the apple and butter mixture and mix again.
    6. Combine the flour and apple mixture with the egg mixture. Fold together well and fast. Pour the mixture into the tin.
    7. Bake until a skewer inserted near the centre comes out clean, about 20 minutes.
    8. Once the cake has cooled, sprinkle with icing sugar.


    This cake goes very well as a tea time treat with custard :)
