A quick and easy mid-week meal. The sauce is packed with different flavours and will go really well with any cut of lamb. You can substitute the fresh ginger for 1 teaspoon ground ginger and it works just as well. Serve with jacket potatoes.
Heat the oil in a large frying pan and brown the lamb chops for 1 or 2 minutes on each side.
Arrange the chops in an ovenproof dish with the onions, pepper slices. Mix together ginger, tomatoes, honey and mixed spice and pour over the chops. Cover dish with foil or a lid and cook in the oven for 1 1/2 hours.
