Quick Cold Tuna Noodle Salad

About this recipe: This dish is perfect for those warm summer days when the last thing you want to do is eat a warm meal. It's easy, cheap, and very refreshing.

Serves: 1 

  • 1 nest egg noodles
  • 100g or 2/3 tin tinned tuna
  • 2 spring onions, sliced
  • 1/4 red chilli, finely chopped
  • 1 dessertspoon soy sauce
  • 1/2 lime, juiced
  • 1 teaspoon mayonnaise
  • a splash sesame oil
  • finely chopped coriander to garnish (optional)

Prep:5min  ›  Cook:5min  ›  Ready in:10min 

  1. Bring a pan of water to the boil and add the nest of noodles. Immediately turn off heat.
  2. Add tuna, spring onions and chilli to a large bowl. Mix well.
  3. Add the soy sauce, lime juice and mayonnaise and mix.
  4. After 3-4 minutes, drain the noodles and run under cold water for 1 minute.
  5. Add the noodles to the bowl of tuna and mix well. Garnish with chopped coriander, if using.

We made this tonight. It was a hit, but the consensus was that the amount of lime was a bit overpowering (half for one person, a whole one for two, etc). I'll use less next time! pinkandothercolours - we might try it hot next time, too - thanks for the idea - 04 Feb 2014
