Tracy's tasty pepperoni pasta

    Lovely and easy to make, the pepperoni flavour gives a sweet taste to the tomato sauce. My kids love this! Serve with garlic bread.

    Serves: 4 

    • 1 large onion, chopped
    • 2 (225g) packets pepperoni
    • 2 teaspoons sundried tomato puree
    • 300ml chicken stock
    • 500g passata
    • 2 tablespoons paprika
    • 1 red pepper
    • 1 orange pepper
    • 2 tablespoons fresh parsley
    • 1 pinch salt and pepper to season
    • 500g tagliatelle or penne pasta

    1. Chop onion and place into large pan, add the pepperoni (there is no need to slice it). Add the sundried tomato puree, chicken stock and passata. Add paprika, peppers and parsley and season with salt and pepper. Bring to the boil and simmer for 20 minutes.
    2. Meanwhile, add pasta to boiling water and cook according to the packet instructions. Drain.
    3. Add the pasta sauce to the cooked pasta.
