About this recipe: Forget a takeaway - make your own Chinese at home. A comforting treat that's much healthier.


Serves: 4 

  • 500g (1 1/4 lb) skinless, boneless chicken breast fillets - diced
  • 2 tablespoons vegetable oil
  • 1/2 green pepper, sliced
  • 1/2 red pepper, sliced
  • 2 carrots, jullienned
  • 1 clove garlic, minced
  • 1 tablespoon cornflour
  • 4 tablespoons soy sauce
  • 1 small tin pineapple pieces, juice reserved
  • 1 tablespoon rice vinegar
  • 1 tablespoon light brown soft sugar
  • 1/2 teaspoon ground ginger

  1. Brown chicken in oil in a large wok over medium high heat. Add green pepper, red pepper, carrot and garlic and stir-fry for 1 to 2 minutes.
  2. In a small bowl, combine cornflour and soy sauce and mix together; pour mixture into the frying pan, along with the pineapple and juice, vinegar, sugar and ginger. Stir together and bring to a full boil. Serve over rice.

I made this for my family this evening. I followed the recipe to the letter and just used granulated sugar instead of soft brown sugar. They loved it, especially my son who said it was delicious. Usually he does not like fruit in stir fry dishes but he ate all the pinapple. Will definately be making this again and again! - 07 Oct 2010
